One of the benefits of living in southern California is the pleasure of growing citrus trees. Our little lemon tree finally recovered from an unusual winter frost. Normally, the tree is quite prolific with almost a perpetual supply of fruit, but the frost cut into production for two years. Lesson learned, throw a blanket over the tree when the weather gets chilly in southern California. Our tree is small enough to tuck into bed.
To celebrate the return of bountiful fruit, my son and I made lemonade with mint from the garden. Delicious.
Another good thing to make is lemon drop candy ... Here's a recipe that, to be fair, I've had mixed with results with - but then candy-making is a finicky business: Mix the juice of two lemons with enough sugar to make a thick paste ... Put paste in a medium saucepan with a heavy base ... Heat to 300F ... Use a teaspoon to pour out "drops" onto waxed paper ... Allow to cool. Perfect for Halloween too!
ReplyDeleteI love the idea of drop candy. I made lollypops in the past. My eldest son had so much fun finding twigs in the yard to use for the handles. I think another candy-making session is in order.
